Happy Monday to all! Hope everyone had a fabulous weekend
I have to share some things with you today, and I’m going to share the more delicious one first! Before I moved to Baltimore, I spent a day with my Grandma and Granddaddy in Indy hanging out, eating lunch, watching my grandfather kick butt in pool, and making my grandma’s FAMOUS Zucchini Nut Bread (minus the nuts, because I don’t like them). I took home 4 mini loaves. They didn’t last long.
I decided I wanted to make that recipe more for special occasions or to share with others, and that I needed a “healthier version” to keep around more often for my own good
I randomly came across this Zucchini Banana Chocolate Chip Bread recipe on Courtney’s Sweet Tooth Sweet Life blog (which I love and follow). The only modification I made to the recipe was this:
- Reduced white flour to 1/3 cup
- Reduced whole wheat flour to 3/4 cup
- Added a heaping 1/2 cup of oats
…and that was all because I’m madly in love with oats and wanted them in the bread!!
I will say Courtney’s pictures are much, much more appealing… but here’s what came out (and was FULLY enjoyed).
The reason I love this recipe so much [for more regular consumption]? There is NO butter. NO oil. And these ingredients haven’t been replaced by weird stuff.
How about bananas (which fits the bill since they’re part of the recipes name)? A fruit loaded with potassium and healthy fiber. And Chobani yogurt (my favorite)? Packed with protein and healthy probiotics. White and whole wheat flour… and oats if you want them! Sources of whole grains (in the latter) and more fiber.
Best of all is that it doesn’t TASTE like a healthy substitute. This stuff is yummy. Try it. And when you do, let me know what you think!!
So I ate some yummy bread… then I had to WORK IT OFF ![]()
(thankfully it gave me great energy to do so!)
I did a little running tour of downtown Baltimore last week, and I decided to run a different direction yesterday morning and take another tour this weekend. Tour of Fort McHenry!
I started from my new place again, and set out on Key Highway (I like the name). Even though it’s a straight shot from where I live to Fort McHenry, I still managed to get myself a little turned around (I’m sure that won’t surprise my Indy Runners buddies). And I was thankful I did! I got caught running through Under Armour Headquarters. Sweet surprise! I didn’t realize how close I was to HQ either!
BUT since I’m in a new city, I have been running with my phone. And thankfully, it’s smarter than I am and helped me find my way to my original destination. I took some nice shots… it was gorgeous. A whole peninsula surrounded by water with a great path to run along. A runner’s and walker’s dream
It was a beautiful run, and turned out to be exactly 5 miles. A nice Sunday morning (hot, humid, sweaty) run! And I finished by the dolphins
What inspires you? Is it the beauty in your surroundings? The people around you? What is it? Find it and RUN WITH IT (no pun intended).
Your fan (always!),
Maggie
